Sausage and Mushroom Egg Bake

This egg-bake is simple but still has tons of flavor. I chose to use Mild Tomatillo Salsa because it enhances the flavor of the dish without adding extra spiciness.

  • 9 eggs
  • ½ lb mild breakfast sausage
  • 1 cup button mushrooms or baby portabellas (sliced)
  • ½ cup Mild Tomatillo Winking Gir! Salsa
  • Salt and pepper (to taste)

 Preheat oven to 375°F. Brown sausage in skillet so that it just a little pink. Add sliced mushrooms cook for additional 1-2 minutes. Add tomatillo salsa and cook until mixture is warm and well incorporated. Beat eggs until smooth and salt and pepper.

Pour sausage mixture into a well greased 9×13” glass baking dish and add beaten eggs. Make sure all ingredients are mixed well in dish. Bake for 30 minutes. Top with sliced tomatoes, cilantro, avocado, or more Tomatillo Salsa.
