- ½ lb bulk breakfast sausage
- 1 pouch Winking Girl! Green Enchilada Skillet Sauce
- 5 eggs (whisked)
- 6-8 Almond Flour Siete Tortillas (Paleo) (sliced into strips)
- 1 large bell pepper (diced or sliced, I used ½ red and ½ green pepper)
- ½ onion (diced)
In a large skillet, cook the breakfast sausage until there is just a little pink left. DO NOT drain the fat as you will use it to help cook the rest of the dish.
Add the onions and bell peppers into the sausage and continue cooking until the sausage is cooked through.
Add the Siete tortilla strips and the Winking Girl! Green Enchilada Skillet Sauce and mix until everything is well incorporated.
Pour in all of the eggs and mix gently so that the egg mixes into the whole skillet. (Make sure they are whisked well first because you won’t be stirring them after this!)
Cover skillet and cook on medium for 5-10 minutes or until egg is fully cooked.
Slice into pie shaped pieces and top with WG! Quick-a-mole, cilantro, and Winking Girl! Salsa.
Makes about 6 pie-shaped slices
