Marination time: 6 hours
Prep time: 20 minutes
- 1 lb chicken breast (sliced into 1 inch strips)
½ red bell pepper (sliced into strips)
½ green bell pepper (sliced into strips)
½ yellow onion (sliced into strips)
1 pouch Winking Girl! Fajita Marinade Skillet Sauce
Salt and pepper (to taste)
2-3 large flour or wheat tortillas
1 1/2 cups prepared arroz amarillo (or any type of prepared rice)
Topping: Sour cream, cilantro and lime, and Winking Girl! Salsa
Mix the sliced chicken with the peppers and onions. Season with a little salt and pepper (if desired). Add the entire pouch of Winking Girl! Fajita Marinade and mix until all chicken and veggies are coated in the sauce. Marinate in the fridge for at least 6 hours or overnight.
Heat some cooking oil in a large skillet and cook the chicken and veggies thoroughly and until everything just begins to caramelize. You may have to drain the excess liquid halfway through. Remove from heat and set aside.
Lay one of the tortillas flat and spoon on about 1/3-1/2 cup chicken and veggies. Add 1/3-1/2 cup rice.
Roll the burritos into desired shape and place into a glass dish. Cover with foil for about 5 minutes before eating so that the heat from the chicken, veggies, and rice can warm the tortillas. You may also put the covered dish into the oven at 300° F for 5-10 minutes. DO NOT OVERHEAT or the tortillas will get tough.
Serve warm and top with sour cream, cilantro and lime, and Winking Girl! Salsa
Makes about 3 large burritos
**Extra time saver tip!** Make ahead of time and zap for 2-3 minutes in the microwave before eating. Makes a great lunchbox meal, hot or cold!
