Fajita Veggie Tacos (Vegan)

Prep time: 10 minutes

  • 1 pouch Winking Girl! Fajita Marinade Skillet Sauce

  • 1 medium-large red bell pepper

  • 1 bunch broccolini (or regular brocolli)

  • 8 oz button mushrooms

  • ½ yellow onion

  • 8-16 soft corn tortillas (works best if you double them up to prevent breakage)

  • 1-2 Tbsp olive olil

  • Salt and pepper (to taste)

  • Avocado or Quick-a-mole

  • Cilantro and lime slices (for garnish)

Cut all raw veggies into bite size pieces. Place in a container with a lid and pour in the entire pouch of Winking Girl! Fajita Marinade Skillet Sauce. Mix until all veggies are coated in marinade (or place the lid on and shake gently until thoroughly mixed).
Let mixture chill in the fridge for 2-3 hours or overnight.

Heat some olive oil on high in a large skillet. Sauté the marinated veggies for 5-6 minutes (you may have to do this a little at a time depending on the size of your skillet).

Spoon the hot veggies onto warm corn tortillas (double them up to prevent breakage!). Top with Quick-a-mole, cilantro, and lime.

Makes about 6-8 tacos
