Sometimes the best “original” ideas come from making slight changes to already great things! We recently adapted this Paleo Leap recipe and liked it so much we decided to share our own version. 😉
For Pie Crust
3 cups almond flour
1/2 cup grassfed butter
2 tsp salt
For Pie Filling
1.5 lb ground beef
2 tbsp cooking oil
1 cup Medium Tomatillo Winking Girl! Salsa
2 tbsp tomato paste
Salt and pepper (to taste)
Preheat oven to 350°F
Use a food processor to combine almond flour, butter and salt. Pulse for 15-20 seconds or until mixture is well incorporated and doughy. Press evenly into a 12 inch pie pan and set aside. Do not bake yet.
Heat the cookingin a large skillet and add the ground beef. Season beef with some salt and pepper and then brown meat until almost cooked. Add Winking Girl! Salsa and tomato paste and mix until everything is well incorporated and then continue to cook for an another 3-4 minutes.
Pour the beef into the pie crust and bake for 35-40 minutes.
Top with chopped lettuce, bell peppers, avocado, cheese (for non-Paleo), or more Winking Girl! Salsa.

**Extra time saver tip!** Make ahead of time and warm up a slice at a time to eat throughout the week. Switch up the toppings to keep it interesting, a fried egg one day and some WG! Quick-a-mole the next!
