Paleo Friendy Burrito Bowls

For the meat

  • 1 lb ground meat (beef, pork, or turkey work best)

  • ¾ cup Winking Girl! Salsa (we used Medium Tomatillo)

  • 3 cloves garlic (minced)

  • ½ onion (diced)

  • salt and pepper (to taste)

  • Cooking oil or cooking fat of choice (for sauteeing)

For the rest of the bowl

  • 2 cups cilantro lime cauliflower “rice” (see recipe from Popular Paleo here)

  • 1-2 sliced avocados

  • The rest of the Winking Girl! Salsa jar unused from above

  • 1 bunch coarsely chopped cilantro

  • Shredded cheese and sour cream (optional for non-Paleo)

 Warm the cooking oil in a large skillet. Add the onion and garlic and sauté for about a minute or until the onions begin to brown. Add the ground meat and season with some salt and pepper. Cook on high until just a little pink is left. Add ¾ cup Winking Girl! Salsa and stir until meat and salsa are incorporated. Reduce heat to medium and cook, stirring minimally, for an additional 4-5 minutes or until the meat in cooked thoroughly.

Serve meat hot over warm cauliflower rice. Assemble burrito bowls as desired.
