Cook time total: 4 hours
- 1 large sliced red onion
- 2-3 lb boneless, skinless chicken breast
- 1 ½ c Winking Girl Salsa (your choice of flavor!)
- 1 ¾ c low sodium chicken broth
- ½ Tsp ancho chili powder
- ½ Tsp ground coriander
- ½ Tsp oregano
- 3 coarsely chopped tomatoes
Layer ingredients as listed above, starting with the sliced onion on the bottom, except the tomatoes. Turn slow cooker on low, roast for 3-4 hours. Add the tomatoes on top of all ingredients for the last hour of cooking. Take chicken out of crock pot and let rest 10 minutes. Trim and discard remaining fat and bones. Pull apart chicken and return to slow cooker. Serve many ways: as tacos, over beans and rice, in enchiladas, over nachos, as soup, dream it up!
