Total time: 8 hours
- 1 large sliced red onion
- 2.5 lb boneless pork shoulder
- 1 ½ c Winking Girl Salsa (Chipotle works great with this!)
- 1 ¾ c low sodium chicken broth
- ½ Tsp ancho chili powder
- ½ Tsp ground coriander
- ½ Tsp oregano
- 3 coursely chopped tomatoes
Layer ingredients as listed above, starting with the sliced onion on the bottom, except the tomatoes. Turn slow cooker on high, roast for 6-8 hours. Add the tomatoes on top of all ingredients for the last hour of cooking. Take pork out of crock pot and let rest 10 minutes. Trim and discard remaining fat. Pull apart pork and return to slow cooker. Serve many ways: as tacos, over beans and rice, in enchiladas, over nachos, as soup, dream it up!
Serves about 6
