Preheat oven to 350° F.
Saute onions for 1-2 minutes and add the ground beef to the pan. Cook the ground beef thoroughly with some salt and pepper and set aside.
Coat the bottom of a glass baking dish (9 x 13) with 3 tablespoon Winking Girl! Red Enchilada Sauce.
Using a corn tortillas add some beef, onion and grated cheese and roll.
Place in the glass baking dish. Repeat until all tortillas are used and the pan is full.
Top with the remaining enchilada sauce and cheese.
Cover with foil and bake for 35 minutes.
Remove foil and bake uncovered for an additional 10 minutes.
Serve warm and top with sour cream and cilantro
