Cucumber Tomatillo Gazpacho

Barbecue season calls for recipes like this. This four ingredient chilled soup/burger topping is quick to make and deliciously versatile.

  • 2 large cucumbers (unpeeled, shredded)

  • 4 Tbsp Just Mayo Original Flavor

  • 3/4 cup Cranberry Mango Winking Girl! Salsa

  • ½ tsp black pepper

  • Sliced red bell pepper (for garnish)

Mix the shredded cucumber, mayo, Cranberry Mango Winking Girl! Salsa, and black pepper in a large bowl until well incorporated.
Let chill in the fridge for 2 hours or overnight.

Serve cold as a chilled soup or use it to top burgers, salads, pasta salad, or sub sandwiches.
