Asian Fusion Pork Lettuce Wraps

Marination time: 2 hours
Prep time: 30 minutes

For the Marinade/Rub

  • Zest from one lime

  • Juice from ½ lime (keep the other half for the rest of the recipe)

  • 2 cloves of garlic (minced)

  • 2 Tbsp honey

  • 2 Tbsp olive oil

  • 2 tsp coarse Kosher salt

Other Ingredients

  • Small – medium sized pork tenderloin

  • 10-15 large romaine lettuce leaves

  • 1 cup carrots (cut into thin strips or matchsticks)

  • 1 cup celery (chopped small)

  • ¼ cup Mild or Medium Tomatillo Winking Girl! Salsa

  • 4 Tbsp Tamari Sauce

  • 2 Tbsp olive oil

  • Juice from ½ lime

  • 1 tsp ginger (dried or fresh)

  • Dash of salt

Poke the pork tenderloin with a fork 10-15 times. Mix the marinade into a thick sauce or paste and rub directly onto each side of the pork tenderloin. Make sure every part of the pork is covered in the marinade. Place in a large container in the fridge for at least 2 hours.

Slice the marinated pork into bite sized pieces and set aside. Heat some cooking oil and add the carrots and celery along with a dash of salt. Sauté veggies for 1-2 minutes and then add the pork pieces, ginger, 2 Tbsp tamari, and all of the Winking Girl! Mild Tomatillo Salsa. Stir these ingredients in and heat for about 5-7 minutes or until the pork is fully cooked.

Squeeze the remaining ½ lime onto the entire dish. Mix until well incorporated. Serve warm on large romaine lettuce leaves.

Tastes great served with Asian fried rice or as a party appetizer.
