Crockpot Scalloped Potatoes

The following recipe is for a 4 quart crockpot. Measurements of each ingredient will vary based on type of potatoes and size of crockpot, but cooking time will remain about the same. Please keep in mind that measurements for this recipe do not have to be exact. Feel free to add more or less of each ingredient as you prefer.

  • 3 medium sized golden sweet potatoes  (but you may use whatever type of potatoes you like)

  • 1 cup shredded cheddar cheese

  • 1 cup Winking Girl! Salsa of choice (I used Mild tomatillo)

  • 1 ½ Tbsp oil or butter (I used bacon fat and it paired well with the potatoes!)

  • Sour Cream and Chives or Cilantro (for garnish)

Slice the raw potatoes very thinly into “chip-like” circles. Drizzle some oil at the bottom of the crockpot and then add one or two layers of potato circles. Spoon about 2-3 Tbsp salsa and sprinkle about 1/8 cup cheddar cheese over the potatoes. Continue to do this with each layer until all potato slices are used and the crockpot is filled to about 1 ½ inch below the top.Pour another 2-3 Tbsp of salsa over the top and pour the oil evenly over the top of the whole dish. Cook on high for 3-4 hours or until the potatoes are very soft.

Serve topped with sour cream, cilantro, and more Winking Girl! Salsa
