with Winking Girl! Fajita Marinade Skillet Sauce

Take a break from you typical ooey-gooey cheesy quesadilla. This unique twist on the traditional quesadilla has fresh fajita flavors and a lighter taste.
½ lb top sirloin steak (sliced into 1 inch strips)
1 large bell pepper (julienned)
1/2 yellow onion (julienned)
1 pouch Winking Girl! Fajita Marinade Skillet Sauce
Salt and pepper (to taste)
10-12 soft corn or flour tortillas
1 cup cheddar cheese (sliced or shredded)
Toppings: Mexican Queso Fresco or other white crumble cheese, cilantro, and lime
Mix the sliced raw steak and sliced bell peppers and onion. Add the entire pouch of Winking Girl! Fajita Marinade Skillet Sauce and some salt and pepper (if desired). Mix everything until steak and peppers are well coated in the sauce. Marinate in fridge for at least 6 hours or overnight.
Heat some cooking oil in a skillet on high and add the marinated mixture. Cook thoroughly until the meat and peppers just begin to caramelize. You may have to drain the excess moisture from the pan halfway through. Remove from heat and set aside.
Place 1-2 tablespoons cheddar cheese on a tortilla and melt slightly in the microwave or oven. Spoon on 1/4 to 1/3 cup steak and veggies and top with queso fresca, cilantro, lime, and a second warm tortilla.
Makes 5-6 quesadillas
Fresca in a flash! Great hot or cold. Also makes a great lunchbox meal!
