Fall Fever Sweet Potato Salad

 A fun Fall reboot of our summertime favorite Sweet Potato Energy Salad.
Using salsa in this recipe allowed us to use less oil and still create a rich saucy texture. We chose to use our mild flavor specifically as it does not overpower the Autumn spices used in the dish.

  • 2 golden sweet potatoes (often called Hannah sweet potatoes)

  • 1 16oz link of smoked sausage (or 8 good quality hot dog links)

  • 1 large baking apple (we used a Gala apple but we think Granny Smith apples would be delicious for this too!)

  • 2-3 stalks celery

  • ½ sweet onion

  • ¼ cup Mild Winking Girl! Salsa

  • 1 Tbsp olive oil

  • 2 tsp cinnamon

  • 1 tsp black pepper

  • 1 tsp pumpkin or apple spice mix (optional)

  • 1 tsp salt

Preheat oven to 400°F.

Dice sweet potatoes, celery, apple, and onion and place in a large mixing bowl. Slice the smoked sausage on an angle to create larger oblong slices (this is optional but creates a nice visual effect). Place sausage in the mixing bowl.

Add Winking Girl! Salsa, olive oil, cinnamon, black pepper, spice mix, and salt. Mix until all ingredients are well coated.

Line a baking sheet with aluminum foil. Pour mixture evenly onto the baking sheet and cover with a second sheet of aluminum foil, lifting a corner of the foil to allow steam to escape.
Bake at 400°F for 40-45 minutes.

Serve warm or let cool to eat as a chilled salad.
