Hot and Spicy Cornbread

Total time: 25 minutes

  • 1 cup flour
  • 1/2 Tsp baking soda
  • 1 1/2 Tsp baking powder
  • 1 Tbsp sugar
  • 1 Tsp salt
  • 3/4 cup cornmeal (I used medium grind)
  • 1 cup buttermilk
  • 1/2 cup Hot Tomatillo Winkng Girl! Salsa
  • 4 Tbsp melted butter


Preheat oven to 425 degrees. Preheat cast iron skillet in oven. Mix together the flour, baking soda, baking powder, sugar, salt, and cornmeal. Beat together buttermilk, salsa, eggs and melted butter. Mix dry and wet ingredients together (don’t over mix). Grease skillet, and pour batter into the preheated greased skillet

Bake at 425 for 15 minutes. Let cool completely and serve with chili or salads.
