Spicy Veggie Soup

This is a great, quick and easy soup to make on a cold day. You probably already have most of the ingredients in your pantry or fridge!

  • 2 cups vegetable broth

  • 1 cup Winking Girl! Chipotle Salsa

  • ½ cup chopped carrots

  • ½ cup chopped celery

  • ½ diced yellow onion

  • 3-4 oz uncooked noodles of choice

  • 2 cloves garlic (minced)

  • 2 Tbsp olive oil (for sauteing)

  • Salt and pepper (to taste)

Warm the olive oil in a medium soup pot and sauté the onions and garlic until they just begin to brown. Add the carrots and celery and sprinkle generously with salt and pepper.
Cook veggie mixture on low-medium heat for 5-7 minutes until carrots begin to soften.

Add the vegetable broth and salsa. Heat until boiling and let simmer for about 10 minutes.

Bring soup to a full boil and add the raw noodles. Cook as you would if cooking the noodles in boiling water.

Serve warm with crackers, sandwiches, or salad.
