Superfood Picnic Salad

Prep time: 15 minutes
Chill time: 2 hours

  • 2 heads raw broccoli

  • 1 apple

  • 1 cup carrots

  • ½ cup dried cranberries

  • ½ cup walnuts or walnut pieces

  • 8 oz sliced ham (optional)

  • ¼ cup Winking Girl! Salsa of choice (I used Mild Tomatillo)

  • ¼ cup mayonnaise

  • Salt and pepper (to taste)

Cut the broccoli, apple, carrots, and ham into bite-sized pieces. Place in a large bowl and mix in cranberries and walnuts. Add in salsa and mayo and mix thoroughly until well combined.

Serve immediately or chill for two hours before serving.

Serves about 5
